I grew up on peaches, but they were canned, not fresh. By putting a smattering of canned peach halves into jello (lime, my favorite), my mother could easily make my sister and me the 1980s version of a healthy snack. Although today, I rarely eat commercially canned peaches, I sometimes shy away from buying fresh peaches because it's hard for me to tell when a peach is at its perfect ripeness or when it is bruised in unseen places.
Luckily, very ripe, soft peaches are great for making ice cream.
To make Honey Peach ice cream, I pureed two peaches with some sugar and cinnamon and let it sit for a few hours to let the flavors mingle. When the ice cream was nearly done, I drizzled honey into the ice cream to make a honey swirl. I liked how the honey immediately hardened to form crunchy bits. I'm looking forward to making this again with more peaches later on in the season. Stay tuned!
