Italian Rainbow Cookie ice cream sandwich

This summer, I was lucky to have spent many days celebrating friends' weddings and adventuring in exciting cities, from Las Vegas to Stockholm. Although I didn't consistently blog about the desserts I ate, ice cream was always on my mind.

The ice cream sandwich at Donatella in the Chelsea neighborhood of Manhattan, has been recognized as the best ice cream sandwich in New York City. Two Italian rainbow cookies embrace the soft vanilla ice cream with almond flavor and a soft cake-like texture. Unlike many ice cream sandwiches, the sandwich isn't overly hard to bite into. As a result, it is possible to avoid the side squishing of the ice cream, where the melted portions squeeze out everywhere other than the section you're biting, and end up on your hands and clothes.

This ice cream sandwich was a dream, and it was the perfect dessert to share before my best friend's perfect wedding.

      Ice cream sandwiches are always delightful, whether made with cookies or brownies. But the almond flavor of the Italian rainbow cookies was really special.
